Vegan Breakfast Wraps


I'm a big lover of guacamole, I could eat it for three meals a day. So I figured I'd try and make an easy breakfast recipe using it.

Ingredients (serves 2):
3/4 cup drained tofu (scrambled)
4 tbsp guacamole (see my Easy Peasy Guacamole for recipe)
1 tsp turmeric
1 1/2 tbsp vegan butter
1 cup button mushrooms, chopped
2 wholewheat wraps
Salt & pepper to taste
50g Vegusto No Moo Piquant grated


Method:
  1. Heat half of the vegan butter in a frying pan, add the mushrooms and cook until a nice golden colour. Salt & pepper to taste.
  2. Scramble the tofu with a little salt, black pepper and the turmeric. Fry in the rest of the butter until warmed through.
  3. Warm through 2 wraps under the grill for a couple of minutes.
  4. Once the wraps are warm, place half of the ingredients in each ones, wrap up and enjoy!

    Do you use nutritional yeast in your scrambles? Add a lovely cheesy flavour
    I tried black salt in it one as I'd seen it used quite a lot in other scramble recipes. It make me want to puke! It smells so bad of egg! Yuk
    Makes me feel sick just thinking about it! haha

    1. I haven't tried nutritional yeast in my scrambles, but that's a great idea! I've never tried black salt, but I used to love egg so maybe i'll have to try it!

  8. Yum!!! I wish I could buy anything vegan here. Unfortunately, I live in a very "backwoods" community. They barely know what vegetarian means :[ Your guac looks AMAZING. I will definitely be trying your recipe. This is something that I could eat everyday too. I use avocado in place of meat all the time.
